BAKED CRANBERRY OATMEAL image

Number Of Ingredients 9

3 cups milk (or almond milk)
6 tablespoons packed brown sugar
1 1/2 tablespoons lite butter
2 teaspoons ground cinnamon
1 1/2 cups old fashioned oats
1 1/2 cups unsweet applesauce
1 egg white
3/4 cup cranberries, cut in half
3/4 cup coarsely chopped walnuts or 3/4 cup pecans

Steps:

  • 1 Preheat the oven to 350F degrees. 2 Coat a 9 in square pan with nonstick spray. 3 In a large saucepan, bring the milk, brown sugar, margarine, and cinnamon to a boil. 4 Meanwhile, in a large mixing bowl, mix together the oats, applesauce, cranberries, egg, and nuts; spread evenly into the prepared pan. 5 When the milk mixture begins to boil, pour out evenly over the oatmeal mixture. 6 Bake uncovered for 30-35 minutes, ore until the liquid has been absorbed and the oatmeal is tender.
