BAKED CHICKEN WITH ROSEMARY POTATOES image

Chicken
3 potatoes
Rosemary sprigs
garlic cloves with skin
salt
pepper or poultry spice as preferred

Steps:

  • Preheat Oven 375. Prep whole chicken then rub inside cavity with salt, (poultry rub if preferred)place Rosemary sprig and 2 garlic cloves without skin. When using chicken pieces season & arrange in baking dish. Scrub potatoes, leave skin on, cut into Quarters & arrange around chicken. Add Rosemary Sprigs, garlic cloves with skin(at least 4 cloves)then pour some Olive oil over chicken & potatoes, sprinkle with salt /pepper and put in oven bake for 45 min uncovered if you used chicken pieces. For whole chicken, cover and bake for an hour depending on the size of your bird. Then uncover and broil for 10 min or until desired shade of brown.
