Baked Chicken Italienne, Mom image

This chicken is so good, and so easy to bake... you could use boneless chicken if you want, or my daughter (a vegetarian) suggested a head of cauliflower in place of the chicken. Either way, the entire house smells amazing while this cooks, and it is a definite favorite.

Number Of Ingredients 8

8 ounce(s) tomato sauce
1/4 teaspoon(s) garlic salt
1/4 teaspoon(s) salt
1/8 teaspoon(s) pepper
1/3 cup(s) parmesan
1 1/4 cup(s) instant whipped potato flakes
2 1/2 pound(s) chicken, cut up
1/4 cup(s) butter

Steps:

  • Oven to 400 degrees. Combine tomato, garlic, salt and pepper. Blend well. Combine potato flakes and cheese. Dip chicken into sauce, roll in potato and set aside. Place melted butter in 9x13. Put chicken in, skin side up. Bake 1 hour or until fork tender.
