Easy peasy. This pancake is a delicious blend of crispy apples and custardy pancake.

Steps:
- Preheat oven to 425F.
- Place the eggs, milk, flour, sugar, vanilla, salt and cinnamon in a blender jar. Set aside.
- Put butter in a 9x13 Pyrex baking dish, then into oven to melt. Careful not to let it burn. Remove from oven.
- Peel apples and slice them thinly. Arrange the apples in the baking pan, over the melted butter. Put the pan back in the oven until the butter sizzles.
- Meanwhile, blend the ingredients in the blender jar until the batter is smooth. When the sizzling apples come out of the oven, pour the batter slowly over the apples. Sprinkle with brown sugar.
- Return pan to the oven for 20 minutes. Test for doneness with a sharp knife in the center. If it comes out clean, the pancake is done.
- Cut in serving pieces and serve immediately. Maple syrup if desired.
