Baked Apple Pancake image

2/3 cup Sugar, granulated
1 teaspoon Cinnamon
1/4 cup Butter, unsalted
2 Apples, peeled, cored and thinly sliced
1/2 cup Flour, all purpose
1/2 cup Milk
2 Eggs, Large
1/2 teaspoon Vanilla
1/4 teaspoon Salt

Steps:

  • Preheat oven to 415 degrees F.
  • In small bowl, stir together 1 tablespoon of the sugar and cinnamon, set aside.
  • In heavy 9-inch oven proof skillet, melt butter over medium high heat. Add apples, cook 5 minutes, stirring often, until apples are transulent.
  • Meanwhile, in a large bowl, whisk together remaining sugar, flour, milk, eggs, vanilla, salt and nutmeg just until blended, do not overmix.
  • Remove skillet from heat and pour batter evenly over apples (there should be only a thin layer of batter. Bake in oven 15 minutes until batter is set.
  • Remove skillet from oven and run a thin metal spatula around edge of skillet to loosen pancake.
  • Invert pancake onto a large plate carefully slide pancake back into skillet.
  • Sprinkle generously with reserved cinnamon sugar mixture.
  • Bake 10 minutes or until puffy and golden brown and a toothpick inserted into center comes out clean.
  • Loosen edges of pancake as before, slide pancake onto warmed serving plate.
  • Serve at once, cut into wedges ad drizzle with maple syrup.
