BAKED ACORN SQUASH ( GLAZES AND FILLING ) image

1 medium squash
salt and pepper
BASIC GLAZE:
1/2 tablespoon butter or margarine
1 tablespoon firmly packed brown sugar, sugar, honey or maple syrup
ORANGE GLAZE:
1/2 tablespoon grated orange peel
VERMONT GLAZE:
1 tablespoon butter or margarine
1 tablespoon firmly packed brown sugar or maple-flavored syrup
1 slice uncooked bacon -- cut into 3 pieces
APPLE FILLING:
1/2 apple -- peeled and sliced
--or 1/4 cup applesauce
1/4 tablespoon raisins
2 tablespoons firmly packed brown sugar
1 tablespoon butter or margarine
1 dash cinnamon

Steps:

  • Heat oven to 400°F. Select medium squash. Cut in half and remove seeds and fiber. Place squash cut-side-up, in pan with small amount of water (about 1/4-inch). Season with salt and pepper; cover with foil. Bake at 400°F for 25 to 30 minutes or until just about tender. Fill each half with one of glazes. Glaze and filling amounts are for each squash half. Return to oven, bake uncovered for 10 to 15 minutes longer.
