This little Piggy named 'smokie' and this little piggy named 'bacon' got "wrapped" in each others arms. Then, the two little piggies went swimming in a pool of butter, brown sugar, peanut butter, chili sauce, curry and cayenne pepper before laying in the heat to get nice and browned and crispy on the outside. Steps:
- 1. Preheat oven to 375°. Cut bacon into thirds and wrap each piece around little smokies. Place in baking dish or casserole seam side down.
- 2. In a medium sauce pan, melt butter over medium heat. Add garlic and let cook for a couple of minutes. Pour in 1 cup of brown sugar and stir until it melts and dissolves.
- 3. Add peanut butter and stir until it melts into the mixture. Next add chili sauce, curry and cayenne pepper.
- 4. Stir until mixture is well combined. Turn heat to low and allow to simmer for about 5 minutes making sure to watch it so it doesn't scorch or burn.
- 5. Pour mixture over smokies. Top with remaining 1 cup brown sugar. Bake for 25 minutes at 375°. Turn heat to 400° and bake for 5-10 more minutes. You're looking for the bacon to start becoming near the end of being crisp.
- 6. Finally, turn the broiler on to get the bacon to that final crispy stage. ONLY leave them in there for about 2 minutes. You don't want to over cook your smokies.
- 7. ***This recipe makes about 80. If you are only going to make one package of smokies you may have to adjust your cooking time. I just don't know as I've only just created the recipe and tried them with a double batch. Just watch for your bacon doneness and you'll be good to go. You will be in HOG heaven. "Pun intended"
