Bacon Pear Gorgonzola Salad image

Number Of Ingredients 12

8 ounces spring mix
2 pears, sliced
1/2 cup pecans
1/2 cup dried cranberries
1/2 cup crumbled gorgonzola
8 slices bacon
1/2 cup evoo
1/3 cup balsamic vinegar
1 tablespoon shallot, minced
2 teaspoons dijon mustard
2 teaspoons sugar
1/2 salt and pepper

Steps:

  • Toast pecans on a baking sheet for 5 minutes at 350 degrees F.
  • Cook the bacon in a fry pan or bake on a rimmed baking sheet lined with parchment paper at 400 degrees for 20 minutes or until done. Drain on a paper towel lined plate, let cool completely, and dice.
  • Combine all the dressing ingredients in a jar with a lid and shake well.
  • In a bowl, place the lettuce, pecans, cranberries, cheese, and bacon. When ready to serve, add the pears and dressing and toss. Serve immediately.
