Bacon Cheeseburger Meatloaf image

This is a Paula Deen recipe. Fabulous meatloaf. I have made a few edits in parenthesis. I normally always make a double batch, then slice and freeze the second meatloaf in individual servings.

1 lb ground chuck
10 slice bacon, cooked and crumbled (i use 5 slices)
8 oz sharp cheddar cheese, grated (i use 4 oz)
2 large eggs slightly beaten
1/4 c breadcrumbs (i use oatmeal)
1/4 c mayonnaise
1 Tbsp worcestershire sauce
1/4 tsp salt
1/4 tsp black pepper
1/3 c ketchup
2 Tbsp mustard (i use dijon)
3 oz french fried onions

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a large bowl, combine everything down to the ketchup. Mix well...get in there with clean hands.
  • 3. In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.
  • 4. Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.
  • 5. You can also make this in mini loaf pans for couples or singles. Be sure to adjust the baking time downward. Bake before or after freezing.
