Steps:
- Preheat oven to 425*. Line muffin pan with 10 liners
- In a large skillet over medium heat, cook bacon until crisp. Remove to a paper towel. Reserve 2 T bacon fat.
- In a medium bowl, whick together flour, baking powder, baking soda, sugar, salt, 1.5 c. cheddar cheese, green onione and cooked bacon
- In a small bowl, combine buttermilk, egg and bacon fat. Stir into the dry ingredients until just combined.
- Scoop batter into perpared muffin tins and sprinkle tops wit remaining 1/2 cup cheddar cheese
