BABY SPINACH SALAD WITH CLEMENTINES, PINE NUTS AND GOAT CHEESE image

Salad:
2 clementines, peeled and segmented
2 oz. goat cheese, crumbled
3 T pine nuts, toasted
4 c packed baby spinach (9oz)
Vinaigrette:
1 peeled Clementine
1 T fresh lemon juice
2 T. olve oil
pinch s and p

Steps:

  • In shallow serving bowl, arrange cl. segments, goat cheese and nuts over spinach Vin: Place clem, lemon juic, oil, s and p in blender and process until pureed. Drizzle over salad or serve on side
