I'm a big fan of chicken tortilla soup, but most all of them are tomato based. This soup is cheese based and better than any tortilla soup I have ever made. The inspiration for this soup came from a Chicken tortilla soup at The Yard House restaurant that I fell in love with and couldn't find a recipe for.

Steps:
- 1. Bring the chicken broth and water to a rolling boil. Whisk in soup mix. Reduce heat to Medium and simmer uncovered 15 minutes, stirring occasionally.
- 2. Add sour cream and both packages of shredded cheese slowly (stirring after every hand full)
- 3. Add rotisserie chicken.
- 4. Salt and pepper to taste.
- 5. Serve in a soup bowl over tortilla chips.
