AUNT MABEL'S COCONUT POUND CAKE image

Cake
1/2 pound unsalted butter
1/2 cup Crisco
2 1/4 cups sugar
5 whole eggs
2 tablespoons white rum
2 teaspoons coconut extract
3 cups flour
1/2 teaspoon baking powder
1/3 teaspoon salt
1 cup whole milk
Glaze
1 cup sugar
1/2 cup water
1 tablespoon almond extract

Steps:

  • Cake Cream butter and shortening. Add sugar and cream some more. Add eggs, one at a time, beating at least one minute apart. Add rum and coconut extract. Add flour mixture and milk, beginning and ending with flour mixture. Bake in greased bundt or loaf pan for 1 to 1 1/4 hours or until done in a 325 degree oven. Glaze While cake is cooking, in small pot, bring sugar and water to a boil. Allow to cool and add almond extract. Remove cake from pan and glaze using all of the glaze while the cake is hot.
