Aunt Carolyn's Mandarin Orange Cake image

My Aunt Carolyn brought this cake to family gatherings while I was growing up.

1 box yellow cake mix
4 eggs
1 (11oz.) can(s) mandarin orange sliced, undrained
1/2 c oil
8 oz cool whip
1 (20 oz.) can(s) crushed pineapple, undrained
1(3.4oz.) box instant vanilla pudding
oil and flour to prepare pans

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Set aside 6 to 8 orange slices
  • 3. FOR THE CAKE:
  • 4. Grease and flour 3 9" round cake pans.
  • 5. Stir to mix cake mix, oil, oranges and eggs in a large bowl.
  • 6. Evenly pour batter into the cake pans.
  • 7. Bake for 25 to 35 minutes or until a toothpick inserted in the middle comes out clean. Cool completely. (About 1 hour)
  • 8. FOR THE FROSTING:
  • 9. In a bowl, mix pineapple and pudding mix until mix is completely dissolved.
  • 10. Add Cool Whip. Stir to mix well.
  • 11. When cake is cool, frost it with the pineapple frosting. Garnish with the reserved orange slices.
