Atchafalaya Chicken image

Number Of Ingredients 18

Chicken Stock
1 Tbl salt
2 t. paprika
1 ½ t. onion powder
1 ½ t. garlic powder
1 ½ t. basil
1 t. dry mustard
1 t. cumin
1 t. blk pepper
¾ t. white pepper
½ t thyme
½ t. savory
2 T. unsalted butter
2 c. chopped onion
1 c. chopped bell peppers
1 - 3 ½ to 4 lb. roasting chicken
¼ c. flour
2 c. chicken stock

Steps:

  • Mix dry seasonings. Cook onions and pepper and butter with 3 T of dry seasonings in frying pan over high heat until brown. Use this to stuff the chicken.
  • One T. seasoning - rub onto chicken well. Put chicken in lg. baking pan. Bake 3 hours at 250 degrees.
  • Gravy: Use juice from chicken and stuffing. Put in sauce pan on high heat. Mix with flour. Mix with wisk and then add chicken stock.
  • Serve over mashed potatoes
