Steps:
- Boil asparagus for 7 minutes in boiling water. Remove and plunge into ice water to cool down for 2 minutes. As soon as cool, drain and dry with paper towels. When ready to serve, combine butter and oil in large skillet over heat. Add asparagus, stir and coat with fat. Sauté until warmed through, about 3 minutes. Transfer to dinner plates. Sprinkle with cheese.
