Asparagus W/ Garlic Lemon Sauce image

2 pound(s) asparagus, fresh, trimmed
2 teaspoon(s) olive oil, extra virgin
1/4 teaspoon(s) salt
2 tablespoon(s) mayonnaise, fat-free
2 tablespoon(s) parmesan cheese, fat-free
2 tablespoon(s) water
1 tablespoon(s) worcestershire sauce, low sodium
3 clove(s) garlic, minced
1 tablespoon(s) lemon juice
2 x large hard boiled eggs, chopped

Steps:

  • Preheat oven to 425 degrees F. Toss asparagus with oil & salt in a large bowl. Spread on a baking sheet & roast, stirring once halfway through, until tender, 15 - 20 minutes.
  • Combine mayonnaise, parmesan, water, worcestershire sauce, garlic & lemon juice in a small bowl.
  • To serve, drizzle the asparagus with the sauce & top with hard-boiled egg.
