ASPARAGUS SAUTEED IN BUTTER AND MUSTARD image

1 lb. young asparagus
2 T. unsalted butter
1 T. dijon mustard
1 T. fresh lemon juice
freshly ground black pepper, to taste

Steps:

  • Heat a large skillet over high heat. Add the asparagus and cook for one minute. Reduce heat to medium and add the butter. When the butter has started to brown, add the mustard and lemon juice. Season generously with pepper. Cook gently for 5 to 7 minutes, turning the asparagus every now and then. The asparagus should be tender but still firm inside.
