ASPARAGUS ROLL-UPS image

2 White sandwich loaves
8 oz. Roquefort cheese
8 oz. Cream cheese
1 TBSP mayonnaise
1 egg
36 fresh asparagus spears, snap off ends
½ cup butter, melted

Steps:

  • Cut crusts off bread and roll each slice flat with a rolling pin. Combine the chesses, mayonnaise and egg in a blender and spread on each slice of bread. Top with 1 asparagus spear and roll up. Brush with melted butter, cut into 3 pieces and place on ungreased cookie sheet. (At this point you may layer rolls between waxed paper and place in an airtight container and freeze.) Bake at 350 F for about 15 minutes or until lightly browned. Makes 9 dozen.
