Apricot Glazed Pork Roast image

I was in the mood for something different and I have always wanted to try glazing a pork roast. So this is what I can up with :) Hubby said this is a def KEEPER!! Enjoy!

Number Of Ingredients 5

2 to 4 lb pork loin
1/2 jar(s) apricot preserves (plus 2 tablespoonful for the top of the roast)
1 1/2 Tbsp balsamic vinegar
dash(es) thyme, dried ( i used 2 shake's of the bottle)
salt and pepper to taste

Steps:

  • 1. Preheat oven 375
  • 2. Wisk together preserves and vinegar add thyme salt and pepper. Coat roast and place in oven safe pan. Take 2 tablespoonful of preserves and dot the top of the roast. Bake for 45 minutes to an hour.
  • 3. Enjoy!! I paired this up with oven roasted garlic/EVOO red potatoes I Put them right in the pan with the roast!! YUMMY!!
