Applesauce Muffins by Sharon image

I have been making these muffins, for 30+ years. The topping really makes them.

MUFFINS
- cooking spray or shortening
1/2 cup(s) or more, chopped nuts (optional)
2 cup(s) all-purpose flour or unbleached all-purpose flour
4 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/2 teaspoon(s) cinnamon
1/2 cup(s) sugar
1 1/2 cup(s) applesauce
1 large egg
1/4 cup(s) butter or margarine, melted
1/4 teaspoon(s) nutmeg
TOPPING
3 tablespoon(s) sugar
1/4 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg
1/4 cup(s) butter or margarine, melted

Steps:

  • Muffin Directions: Preheat oven to 425°F. Spray or grease muffin cups.
  • If using nuts, dust them with flour. Then, stir together all dry ingredients in muffin section. Mix applesauce, egg, and melted butter. Pour all at once, into flour mixture. Stir, just until moistened. Pour batter into greased muffin cups.
  • Bake for 20 minutes, or until golden brown. Makes 12 muffins.
  • Topping Directions: Combine all dry ingredients. Dips tops of hot baked muffins in melted butter; then, in sugar mixture. Serve warm.
