Applesauce Cinnamon Muffins image

1 1/4 c oat bran
1 c whole wheat flour
2 tsp cinnamon
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 Tbsp brown sugar
3/4 c unsweetened applesauce
3/4 c apple juice, frozen concentrate
1/4 c vegetable oil
2 large egg, whites
1 tsp vanilla extract
1/4 c chopped walnuts or pecans
1/4 c chopped apple

Steps:

  • 1. Preheat oven to 350.
  • 2. In a medium bowl, combine oat bran, whole wheat flour, cinnamon, baking powder, baking soda, and salt.
  • 3. In a large mixing bowl, whisk together brown sugar, applesauce, apple juice concentrate, oil, egg whites, and vanilla. Mix until combined well.
  • 4. Stir dry ingredients into wet ingredients. Mix well until no flour remains.
  • 5. Fold in finely diced apples and nuts of choice.
  • 6. Line muffin tin with paper liners and fill them until they are almost full. It should just be enough for 12.
  • 7. Bake 15 - 20 minutes or until a toothpick comes out clean in the center of the muffin.
