Applesauce Cake image

This delicious and moist Applesauce Cake is made with applesauce, crisp apples, buttery pecans, plump raisins and a perfect blend of fall spices. I love to take this cake to potlucks, family reunions, and neighborhood shindigs. It has so much incredible flavor and it is even better the day after it has been baked.

2 c flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/2 c butter
1/2 c sugar
1/2 c brown sugar
1 c applesauce
1 egg
1 apple finely chopped
1/2 c raisins
1/2 c chopped pecans

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour an 8 x 8 inch baking dish
  • 2. In a medium bowl whisk together the flour, baking soda, ground cinnamon, ground nutmeg, and ground cloves.
  • 3. Using a hand mixer or stand mixer cream the butter and sugars; until light and fluffy. Turn the mixer to low and add applesauce and egg; blending just until combined.
  • 4. Add the flour mixture to the butter/sugar mixture in three increments mixing just until combined after each increment. Stir in the apples, pecans, and raisins. Spoon into the prepared baking dish.
  • 5. Bake 40-45 minutes or until a toothpick inserted in the center comes out clean. Serve warm. If desired serve with warm caramel sauce.
