APPLES WRAPPED IN PUFF PASTRY image

1 frozen puff pastry sheet, thawed
2 red delicious apples
1/2 lemon, juiced
1 Tbsp flour (to sprinkle the counter)
3 Tbsp apricot preserves
Cinnamon (optional)
Powdered sugar for decorating (optional)

Steps:

  • Cut apple in 1/2 lengthwise and core Cut into very thin slices, widthwise put in bowl with water and juice of 1/2 lemon Microwave 3 min or until softened, drain Put preserves in small bowl, add 2Tbsp water, microwave 1 min Unwrap and lightly roll one sheet pastry (lightly floured) and cut into 6 strips Spread each with jam Lay overlapping apple slices on the bottom half on dough, rounded side down and sticking out a bit and sprinkle with cinnamon Fold the top down over so apple is sticking out Roll tightly and place in cupcake tin Bake at 375 for 40-45 min.
