Steps:
- saute onions, garlic, ginger. add apples. cover with lots of curry and turmeric. fry and stir a bit. add equal parts coconut milk and broth to slightly more than cover apples. simmer.(about 4 cups broth) when the apples are cooked, add the bag of spinach. wilt it. puree. add lemon juice and a pinch of cilantro. top with avocado.
