Apple Pork Chop Casserole image

I have been making this for 45 years. My husband loves them. I use Granny Smith with Honeycrisp apples, or what ever apples I have. Red and green mixed tastes so good and colorful. 6 medium pork chops, double-thick
3 Tbsp flour, seasoned
salt and pepper
1/3 c apple cider
1 1/2 tsp corn starch
2 tsp cinnamon
1/4 tsp fresh grated nutmeg
3 large apples
3/4 c raisins
2 Tbsp butter
3 Tbsp oil to fry chops.
1 Tbsp sugar
1 tsp apple cider vinegar

Steps:

  • 1. coat chops with flour and brown in med pan on both sides.
  • 2. add corn starch, and apple cider, sugar and vinegar in small bowl. Mix well.
  • 3. Butter a large casserole. Pour in apple cider mixture.
  • 4. Cut apples in thick wedges (peeled or not) and cut in half to make large chunks.
  • 5. Spread in 1 layer in casserole. Add raisins evenly. Sprinkle with cinnamon and grate nutmeg over top.
  • 6. Layer chops on top of apples. Dot with remainder of butter. Cover with foil. Bake in 350 degree oven for 30 to 35 mins. Uncover and bake another 10 to 15 mins.
  • 7. Remove from oven and let sit 10 to 15 mins. Serve.
