Apple Pie Cheesecake image

I found this recipe in Woman's Day Magazine about 4 years ago. I made it for Thanksgiving and everyone LOVED it! So now I make this every year for Thanksgiving and Christmas. It is AMAZING!!

15 pecan shortbread cookies
4 Tbsp butter, melted
3 pkg cream cheesesoftened
1/4 c light brown sugar
1/2 c sugar
2 tsp ground cinnamon
1 tsp vanilla extract
3 eggs
1 can(s) 21oz apple pie filling (comstock)
3 c whip cream or topping
2 Tbsp caramel sundae topping

Steps:

  • 1. Preheat Oven to 350 F. Wrap outside of 9" springfoam pan with foil. Place Cookies in food processor; process to fine crumbs. Gradually add butter, pulsing until combined. Press mixture into the bottom and up one quater of side.
  • 2. On medium speed, beat cream cheese, sugars, cinnamon and vanilla until creamy. Beat in eggs, one at a time.
  • 3. Pour 3 cups of Cheesecake Batter into crust Top with Apple Pie Filling Then pour remaining Cheesecake Batter on top.
  • 4. Bake 45 minutes or until set Turn oven off; Let Cheesecake stand in oven with door closed for 1 hour. Remove from from oven; cool completely on rack. Remove Foil and refrigerate cheesecake until ready to serve.
  • 5. Remove side of Pan. Top Cheesecake with Whip Cream Drizzle with Caramel topping.
