Apple Pecan Layer Cake image

Another recipe from my apprenticeship class and one that garnered kudos from the profs. This is a holiday favorite of the family, as well....perfect for decorating. Great taste and texture.

Number Of Ingredients 14

2 1/2 c flour, sifted
2 c sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 1/2 c applesauce
3/4 c veg. oil
2 eggs
1/2 c pecans, chopped
FROSTING
1/2 c butter - do not use margarine
4 1/2 c confectioners' sugar
6-8 Tbsp apple juice

Steps:

  • 1. Heat oven to 350 degrees. Grease and flour two 9" cake pans.
  • 2. Spoon flour into measuring cup; level off. In large bowl, combine flour, sugar, baking soda, baking powder, salt and cinnamon.
  • 3. Add applesauce, oil and eggs; blend on low till moistened. Then beat 2 minutes on high.
  • 4. Stir in pecans. Pour batter into prepared pans. Bake till toothpick or cake tester inserted comes out clean. Cool 10 minutes; then remove from pans.
  • 5. FROSTING: Cool cake completely. In small heavy saucepan over medium heat, brown butter till light golden brown, stirring constantly.
  • 6. Remove from heat; cool completely. In large bowl, combine browned butter, powdered sugar and 4 TBSP. of apple juice; blend on low till moistened.
  • 7. Continue beating till well blended, adding additional apple juice until of spreading consistency. Fill and frost cake. Garnish with pecans, if desired. NOTE: Walnuts work just as well and give great flavor.
