APPLE OATMEAL PANCAKES image

Number Of Ingredients 9

2/3 C Whole wheat flour
1/3 C Oatmeal (Large flake)
1/4 C boiling water (or more)
1/2 C Milk or buttermilk
1/4 tsp baking soda
1/8 tsp baking powder
1/4 tsp cinnamon
Pinch salt
1 med apple (half peeled and chopped, half sliced)

Steps:

  • In a small bowl, our enough boiling water over oatmeal to cover and let stand until softened. Meanwhile, in a medium bowl, mix together flour baking soda, baking powder, salt and cinnnamon. Add milk and stir until just combined. Add oatmeal and chopped apples to mixture and stir to combine. Add additional milk as needed. Fry half of batter on med-low heat until bubbles form on top and bottom is golden. Flip and cook just until golden on other side. Repeat with rest of batter. Makes two 6" pancakes. Garnish with sliced apples and serve with maple syrup.
