Apple Cinnamon Coffee Cake image

This is a great recipe to make with all those apples that you picked in the fall! My family loves this cake warmed up with ice cream on the side.

Number Of Ingredients 14

2 large or 4 small baking apples - peeled, cored and chopped small
1 1/2 cup(s) all purpose flour
1 cup(s) sugar
1/4 teaspoon(s) salt
1 teaspoon(s) baking powder
1/2 teaspoon(s) cinnamon
1/2 teaspoon(s) vanilla
1/4 cup(s) butter - melted and cooled
3/4 cup(s) half and half or milk
1 large egg, beaten
TOPPING:
1/4 cup(s) light brown sugar - packed
2 teaspoon(s) cinnamon
1/2 cup(s) chopped walnuts or pecans

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease an 8x8 pan with cooking spray.
  • In mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
  • In another bowl, mix together the melted butter, egg, vanilla and milk or half-n-half.
  • Combine the wet and dry ingredients gently, being careful to not over mix. The batter should be slightly lumpy. Add in the chopped apples.
  • Combine the nuts, brown sugar and cinnamon. Spread over the top of the batter.
  • Bake for about 50 minutes, or until toothpick inserted in center comes out clean. This is delicious served warm and with ice cream. Cover and store remaining cake in fridge.
