APPLE CAKE WITH RUM SAUCE image

Yield 4 to 6 servings

1/2 cup raisins
2 cups peeled and finely chopped or coarsely grated MacIntosh apples
1 cup sugar
1 egg, beaten
1/4 cup oil
1/2 tsp each cinnamon, baking powder, baking solda and salt
1/4 tsp nutmeg
1 cup flour
RUM SAUCE
1/4 cup (1/2 stick) unsalted butter
1/2 cup whipping cream
1/2 cup packed dark brown sugar
Pinch of salt
2 tablespoons dark rum

Steps:

  • Soak raisins in 1/2 cup water for 30 minutes. Drain. Mix apples and sugar in large bowl and let sit 30 minutes. Add all ingredients to apple mixture, stirring to mix. Pour into prepared ring mould. Microwave at 50%power 8 to 10 minutes and then at 100% power 1 to 2 minutes.(This can also be baked in a conventional oven - 350 degrees till done about 35 or 40 minutes roughly) Let stand 5 minutes. Invert onto cake plate and serve with whipped cream and or Rum Sauce. RUM SAUCE Makes about 1 cup Melt butter in heavy medium saucepan over medium-high heat. Add cream, sugar and salt. Bring to boil, stirring until sugar dissolves. Remove from heat. Stir in rum. (Can be prepared 2 days ahead. Cover and refrigerate. Rewarm over low heat, stirring constantly.) Poke holes in the cake and pour over or pour on individual slices.
