APPLE AND PEAR LOAF WITH GORGONZOLA image

Yield 1 loaf

2 tsp dry yeast
1 tsp superfine sugar
1 C lukewarm water
3 C all purpose flour
1 1/2 Tbs olive oil
sea salt
1 Green apple, grated
2 pears, chopped
2 3/4 oz gorgonzola, crumbled
gorgonzola, extra to serve

Steps:

  • Preheat oven to 350. Place the yeast, sugar and water in a bowl and mix to combine. Set aside in a warm place for 5 minutes or until bubbles appear on surface. Place the yeast mixture, flour, oil, salt apple, and pear in a bowl and mix until a dough forms. Turn out and knead on a lightly floured surface for 3-5 minutes or until a smooth dough forms. If the dough becomes sticky, add a little extra flour to the dough as you knead it. Knead the gorgonzola into the dough and place in a greased loaf pan. Bake for 30 minutes or until golden brown and the bread is cooked through. Serve with the extra gorgonzola.
