ANYTIME FRITTATA image

Number Of Ingredients 11

1 tbsp. vegetable oil
1 onion, chopped
1/2 cup hickory smoked ham, chopped
1 1/2 cups frozen hash browns (no need to thaw)
1 1/2 cups cheddar or monterey jack cheese
1 4 oz. can chopped green chilies, drained
5 large eggs
1/3 cup milk
salt and pepper to taste
pinch cayenne pepper (optional if you're a pussy)
1/2 cup salsa (hot or mild* see above)

Steps:

  • Preheat oven to 375 F. Set rack in the top third of the oven. Lightly oil 9 inch pie plate or small ovenproof skillet. Heat oil in large skillet over medium-high heat. Add onion and saute' until lightly browned. Add meat and heat another 2 minutes. Remove from heat and add potatoes. Then stir in cheese and chilies. Transfer this mixture to the prepared pan or small skillet, spreading evenly. In a medium bowl, whisk together eggs, milk, salt, black pepper and cayenne until well combined. Pour evenly over the potato mixture. Bake for 30 to 40 minutes or until golden on the top and set in the center. Cut into wedges and serve, topped with salsa.
