3/4 cup pine nuts
1/3 cup olive oil
6 cloves garlic, minced
1/2 teaspoon dried crushed red pepper
3/4 pound angel hair pasta
3 pounds fresh spinach, washed & stemmed
3 tablespoons butter
1/2 cup grated Parmesan cheese
1/8 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Saute pine nuts in olive oil until golden. Remove nuts and set aside. In same oil, saute garlic and red pepper for 3 minutes; set aside. Cook pasta per pkg directions until tender and drain. Reheat oil containing garlic and pepper; add spinach and saute until wilted (about 3 minutes.) Stir in butter. In large bowl, toss pasta, spinach, pine nuts and cheese. Add salt and pepper and serve.

1 tablespoon cornstarch
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
1 package (6 ounces) fresh baby spinach
1/2 cup dried cherries
1/4 teaspoon ground nutmeg
1/2 cup shredded Parmesan cheese
1/3 cup chopped pecans, toasted
1/4 cup pine nuts, toasted

Steps:

  • Cook pasta according to package directions. , Meanwhile, in a small bowl, toss chicken with cornstarch, salt and pepper. In a large nonstick skillet, heat oil over medium-high heat. Add chicken mixture; cook and stir until no longer pink. Stir in spinach and cherries; cook 3-4 minutes longer or until spinach is wilted., Drain pasta, reserving 3/4 cup pasta water. Place pasta in a large bowl; sprinkle with nutmeg and toss to combine, adding enough reserved pasta water to moisten pasta. Serve with chicken mixture. Sprinkle with cheese and nuts.

2 tablespoons olive oil
2 tablespoons butter
1 1/2 lbs shrimp, peeled,tails left on,deveined,and rinsed (35 to 40 per lb.)
3 tablespoons minced garlic
3/4 teaspoon hot chili flakes
1/4 teaspoon fresh ground pepper
salt
1 cup dry white wine
2 cups fresh basil leaves, slivered
1/2 cup toasted pine nuts

Steps:

  • In a 6- to 8-quart pan over high heat, bring about 4 quarts water to a boil; add angel hair and cook, stirring occasionally, just until tender to bite, 3 to 4 minutes.
  • Drain pasta, reserving about 1/3 cup cooking liquid; return pasta to pan.

2 large garlic cloves, minced
