Steps:
- Saute onion in a small amount of water for 3 minutes. Add carrots and celery and cook until onion is transucent and carrots/celery look slightly wilted. Add thyme, basil, oregano, lentils and 2 cups water. Bring to a boil, cover and simmer for 30 minutes. Add an additional 1-2 cups of water (to desired consistency) and continue to simmer for 15 minutes. Add spinach and cook for 2 minutes until wilted.
