Steps:
- 1. Thoroughly mix gelatin, 1/2 cup sugar and salt in saucepan.
- 2. Beat together egg yolks, lime juice and water; stir into gelatin mixture.
- 3. Cook and stir over medium heat just until mixture comes to boiling.
- 4. Remove from heat; stir in grated peel.
- 5. Add food coloring sparingly to tint pale green.
- 6. Chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon.
- 7. Beat egg whites until soft peaks form; gradually add 1/2 cup sugar, beating to stiff peaks.
- 8. Fold gelatin mixture into egg whites.
- 9. Fold in whipped cream.
- 10. Pile into cooled baked pastry shell.
- 11. Chill until firm.
- 12. Spread with more whipped cream; edge with grated lime peel.
- 13. Sprinkle chopped pistachio nuts in center.
- 14. Garnish with thinly sliced lime placed in whipped cream mounds around edge of pie.
