I used to make this wonderful spicy apple cake in the 70's but I had lost the recipe. For years I tried to remember the name of it and today is the day -- it was called "AMAZIN' RAISIN CAKE! I found it in three places on the net and the recipe was exactly the same in each one so this has got to be it. I remember the lovely...

Number Of Ingredients 16

SIFT TOGETHER
3 c all-purpose flour
2 c sugar
2 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1/4 tsp ground cloves
BEAT TOGETHER:
2 whole eggs
1/3 c milk
1 c hellmann's ® or best foods ® real mayonnaise
COMBINE WET AND DRY, MIX WELL, THEN ADD:
3 c peeled chopped apples (granny smith are excellent but any will do)
1 c raisins
1 c chopped walnuts or pecans

Steps:

  • 1. Spoon the thick batter into a 9x12-inch greased & floured pan.
  • 2. Bake at 350 for 45-55 minutes.
  • 3. Cool. Cut into squares & serve.
  • 4. Cake can be frosted with cream cheese icing, or served with whipped cream, but I think it tastes great just as it is -- the apples inside sweeten it up very nicely!!-- up to you.
