Almond Sandies image

I tweaked this from a recipe for pecan sandies, since my hubby & I don't like pecans. He loves these. He says everyone in his office are always asking when I'm going to make them again. I hope you enjoy :)

Number Of Ingredients 6

1 c butter ( i use unsalted)
2 1/4 c all purpose flour
1/3 c white sugar
1 1/8 tsp almond extract
1 c chopped almonds
1 c sifted powdered sugar (optional)

Steps:

  • 1. In a mixing bowl, beat butter with an electric hand blender until creamed.
  • 2. Add about 1/2 the flour, all of the sugar, almond extract, and 1 tablespoon water.
  • 3. Beat until thoroughly combined. Beat in remaining flour (if dough is too dry, add a little more water).
  • 4. Stir in almonds.
  • 5. Shape into 1 inch balls. Place on an ungreased cookie sheet and lighly flatten with the palm of your hand.
  • 6. Bake in a 325 degree oven for about 20 minutes or until bottoms are lightly browned.
  • 7. Cool cookies on a wire rack.
  • 8. Gently shake cooled cookies in a bag with powdered sugar (if desired).
