Almond Pasta Sauce image

Number Of Ingredients 9

1 pound grape tomatoes washed
3/4 cup water
1/2 cup EVOO
1 heaping tsp pink Himalayan sea salt
1/2 heaping tsp fresh ground pepper
1/2 cup coarsely chopped fresh Italian basil
1/2 cup Pecorino Romano cheese
1/2 cup Parmigiano Reggiano cheese
1 cup unsalted dry roasted sliced almonds

Steps:

  • 1. In a blender layer the above ingredients starting with the tomatoes and ending with the almonds. 2. Blend on low speed. Sauce should be CHUNKY. Do not over blend. 3. Adjust seasoning to your taste. Notes: Serve immediately over angel hair pasta, spaghetti squash, fish, chicken, or vegetables. Creative cools make add balsamic vinegar to create a salad dressing or crostini (for the crostini add a touch of dry oregano).
