No Bake Almond Joy Snack Bites
YIELD: MAKES ABOUT 12 TO 15 BITES TOTAL TIME: 20 MINUTES
ingredients:
2/3 cup oat bran
1/4 cup ground flaxseed
1/4 cup almond flour
1/3 cup unsweetened, flaked coconut
1/4 cup sliced toasted almonds
1/4 cup mini chocolate chips
2 tablespoons chia seeds
pinch of salt
1/4 cup creamy almond butter
1/4 cup honey
2 tablespoons coconut oil
2 tablespoons coconut butter
1 teaspoons vanilla extract
to coat:
1/3 cup unsweetened, flaked coconut
1/3 cup sliced toasted almonds

Steps:

  • directions: In a large bowl, stir together the oat bran, flax, almond flour, coconut, almonds, chocolate chips, chia seeds and salt. In a small saucepan, combine the almond butter, honey, coconut oil, butter and vanilla extract over low heat. Stir until it is completely melted and smooth. Add the almond butter mixture to the dry ingredients, stirring well until the mixture is moistened and a wet dough forms. Shape the dough into balls that are around 1 inch in diameter. Roll each ball in the coconut/almond crumb coating until covered.
