ALMOND-CRUSTED CHOPS WITH CIDER SAUCE image

This recipe originally says to cook the pork chops 3-4 minutes on each side. My personal preference is to cook them longer, because I think cooking them in so short a time makes them tough. 1/2 c panko bread crumbs
1/2 c ground almonds
1/3 c all purpose flour
1/2 tsp salt, divided
2 eggs, beaten
4 boneless pork loin chops, 3/4" thick
3 Tbsp olive oil
1 c apple cider or juice
4 oz cream cheese, cubed
1 Tbsp honey, optional
minced chives

Steps:

  • 1. In a shallow bowl mix bread crumbs and ground almonds. In another shallow bowl mix flour and 1/4 tsp. salt. Place eggs in a separate shallow bowl.
  • 2. Dip pork chops in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help coating adhere.
  • 3. In a large skillet, heat oil over medium heat. Add pork chops, cook 12-15 minutes on each side. Remove from skillet; keep warm. Wipe skillet clean.
  • 4. In same skillet over medium heat, combine apple cider, cream cheese, remaining salt and, if desired, honey. Cook and stir 2 minutes. Serve with pork chops; sprinkle with chives.
