ALMOND CHEESECAKE BARS image

Another splenda recipe from my splenda cookbook!!!

CRUST:
1/4 c splenda
1 1/4 c graham cracker or vanilla wafers crumbs
1/3 c light butter melted
1/4 c toasted sliced almonds, finely ground
FILLING:
12 oz reduced fat cream cheese
1/2 c splenda
2 large eggs
1/4 c reduced fat sour cream
2 1/2 tsp vanilla extract
1 tsp almond extract
TOPPING:
c toasted, sliced almonds

Steps:

  • 1. preheat oven to 350 degrees. Spray an 8by8 inch square pan with nonstick cooking spray., Set aside.
  • 2. Mix crust ingredients together in a mixing bowl. Mix well. Press into prepared pan, Bake 10 to 12 minutes or until firm.
  • 3. Mix cream cheese and splenda together until smooth. Add eggs, one at a time, scraping the side of the bowl, and mixing well after each addition,. Add sour cream and extracts mix well Pour over prepared crust.
  • 4. Bake in oven for 40 to 50 minutes. or until firm. Top with toasted almonds.
