ALMOND BRITTLE image

Yield 2 lbs

Number Of Ingredients 7

2 cups sugar
3/4 cup light corn syrup
1 1/4 cup water
1 lb shelled almond pieces (chunks or halves) - about 3 cps
3 Tbs butter, cut into pieces
2 tsp baking soda
1 tsp vanilla

Steps:

  • 1. Butter the bottom and sides of a large baking sheet. Set aside. 2. Combine sugar, corn syrup and water in a large, heavy saucepan over medium heat, stirring well to combine. Cook to hard ball stage (264 F) without stirring, for about 25 minutes. 3. Remove from heat and stir in nuts and butter. Cook ove rmedium heat, stirring constantly, for 5-7 minutes or until mixture is slightly thickened and is a light caramel color. 4. Remove from heat and stir in baking soda and vanilla. Pour onto prepared sheet, quickly spreading to almost fill sheet. Let cool completely before breaking into pieces.
