ALICE WATERS' GREEN BEANS WITH TOASTED ALMONDS & LEMON image

Number Of Ingredients 5

1 pound green beans
3 T butter
1/4 c sliced almonds
Juice of 1/2 lemon
salt

Steps:

  • Trim the stem ends from beans. Melt butter in heavy pan over medium heat. When foam has begun to subside, add almonds. Cook, stirring fairly often, until the almonds begin to brown. Turn off the heat and add lemon and salt. Parboil beans in salted boiling water till tender, about 1 min after returning to boil. Drain well and toss with almonds and butter. Taste for salt and adjust as needed.
