ALICE SPRINGS CHICKEN image

Number Of Ingredients 16

4 Each Chicken Breasts
8 Slices Bacon
1 Tablespoon Vegetabl Oil
2 Cups Mushrooms
2 Tablespoon Butter
1 Cup Monterey Jack Cheese
1 Cup Cheddar Cheese
1 teaspoon Salt
1 teaspoon Pepper
1 teaspoon Paprika
2 teaspoon Parsley
Honey Mustard Sauce:
1/2 Cup Grey Poupon Dijon Mustard
1/2 Cup Honey
1-1/2 teaspoon Vegetable Oil
1/2 teaspoon Lemon Juice

Steps:

  • Wisk together mustard , honey , 1-1/2 tsp. oil and lemon juice until combined. Marinade chicken breasts in sauce for at least 2 hours. Preheat oven to 375 degrees. Slice Mushrooms. Shred cheeses. Heat remaining oil in a pan and sear chicken breasts for 3-4 minutes on each side. In another pan , saute mushrooms in butter. Season chicken with salt , pepper and paprika. Place 2 pices of bacon on each chicken breast along with mushrooms and top with cheeses. Bake in oven for 7-10 minutes or until cheese is melted and bubbly. Meanwhile cook marinade till almost a boil to kill any bacteria. Drizzle marinade over finished chicken and/or serve on the side for dipping.
