Air-Fryer Butternut Squash image

1 butternut squash (2 pounds), peeled and cut into 1-1/2-inch cubes
1/2 cup thawed orange juice concentrate
4 teaspoons coarsely chopped fresh gingerroot
1/4 teaspoon pepper
2 teaspoons butter, melted

Steps:

  • Preheat air fryer to 375°. In a large bowl, toss squash, orange juice concentrate, ginger and pepper. Transfer to greased tray in air-fryer basket. Cook until squash is tender, 20-25 minutes, stirring every 5 minutes. Stir in butter before serving.
