Air-Fryer Burgers image

Yet another use for gochujang (Korean red chile paste), which is among my favorite seasonings, in this Korean-inspired dish, which is one of all-time favorite cuisines. But most important, this is yet another way to make burgers that your whole family will enjoy. Serve them with hamburger buns or, for a change, serve with large lettuce leaves for a combination of hot and cold and crunchy that's to die for.

1/4 cup chopped scallions
2 tablespoons gochujang (Korean red chile paste)
1 tablespoon dark soy sauce
1 tablespoon toasted sesame oil
2 teaspoons minced garlic
2 teaspoons minced fresh ginger
1/2 teaspoon kosher salt
1 pound 85-percent lean ground beef
2 teaspoons sugar
1/4 cup mayonnaise
1/4 cup chopped scallions
1 tablespoon gochujang (Korean red chile paste)
1 tablespoon toasted sesame oil
2 teaspoons sesame seeds
4 hamburger buns

Steps:

  • For the burgers: In a large bowl, mix the scallions, gochujang, soy sauce, sesame oil, garlic, ginger and salt. Use your hands to add in the ground beef and sugar. Divide the meat into four portions and form them into round patties. Marinate at room temperature for 30 minutes, or cover and refrigerate for up to 24 hours.
  • Place the patties in a single layer in the air-fryer basket (see Cook's Note). Set the air fryer to 350 degrees F for 10 minutes.
  • Meanwhile, for the gochujang mayonnaise: Stir together the mayonnaise, scallions, gochujang, sesame oil and sesame seeds.
  • At the end of the cooking time, use a meat thermometer to ensure the burgers have reached an internal temperature of at least 160 degrees F (well-done).
  • To serve, place the burgers on the buns and top with the mayonnaise.
