Acini de Pepe image

This is a salad, but folks will think this is dessert. The most requested for picnics, outings, get togethers, etc.

Number Of Ingredients 11

1 box(es) acini pasta
1 cup(s) sugar
1/2 teaspoon(s) salt
3 - eggs (beaten)
1 tablespoon(s) flour
1 3/4 cup(s) pineapple juice ( saved from cans of pineapple)
1 can(s) 20 oz crushed pineapple
1 can(s) 20 oz tidbits pineapple
1 - 8 oz carton cool whip
2 can(s) 11 oz mandarin oranges
1 small package miniature marshmallows

Steps:

  • Start one day ahead.
  • Combine sugar, salt, flour, juice and eggs Cook over medium heat, stirring constantly until thick. Cool completely.
  • Boil, in salted water, 1 box Acini. Drain, rinse and cool. Place in large bowl, and mix with cooked mixture. Cover, and put in fridge overnight.
  • Day two
  • Add both cans drained pineapple, cool whip, oranges (not drained), and package of small marshmallows.
  • Mix well and chill.
  • Enjoy!
