Steps:
- 1. Whirl eggs and cream in blender until well-beaten. Add salt and pepper if desired. Set aside.
- 2. Melt butter in skillet over medium-low heat. Saute vegetables 2-4 minutes. Pour beaten eggs over vegetables and cover skillet. Cook until eggs are almost set.
- 3. Preheat broiler. Top frittata with grated cheese. Place under broiler for 2-3 minutes, until cheese is melted and frittata is puffy. Serve immediately.
- 4. You can double this recipe for two if you use a 9-10 inch skillet. You can also add other herbs, like rosemary or thyme, if you like. Try different cheeses and different vegetable combinations.
