7-Layer Casserole image

1 cup white rice, rinsed
3 cans (8 oz.) tomato sauce, divided
1 cup corn, frozen or canned, drained
1/2 cup green pepper, chopped
1/2 cup onion, chopped
Salt & pepper
1 1/2 lb ground beef
Oscar Mayer Bacon

Steps:

  • Layer 1: Place rice in bottom of 2 qt. casserole, Add 1 of the cans of tomato sauce plus one can of water.
  • Layer 2: Add the corn.
  • Layer 3: Lay the chopped pepper and onions, season with salt and pepper.
  • Layer 4: Pour a can of tomato sauce over the peppers & onions.
  • Layer 5: Roll the meat into a circle that is slightly larger than the size of the casserole (it will shrink with cooking) and place on top
  • Layer 6: Pour the last can of tomato sauce plus one can of water over meat, season with salt & pepper.
  • Layer 7: Lay the bacon strips over all.
  • Bake at 350°F, covered, for anywhere from 60 to 90 minutes, then uncover, and continue baking for anywhere from 60 minutes to 2 hours. Meat and rice should be cooked in center.
